Here is a classic Irish sodabread recipe adapted to make breakfast muffins.

Ingredients:

360ml buttermilk
2 tbsp butter, melted
1 egg, lightly beaten
200g raisins
350g plain flour
125g sugar
1 tbsp baking powder
1 tsp baking soda
1 tsp salt

Method:

Mix together the buttermilk, melted butter, egg and raisins in a bowl.

In a separate bowl, combine the flour, baking powder, baking soda and salt.

Add the buttermilk milk to the flour mix and mix together until combined.

Line muffin wells with paper cases then spoon in the batter, filling the wells no more than 3/4 full.

Transfer to an oven pre-heated to 170°C and bake for about 25 minutes, or until nicely risen and golden brown on top.

Allow to cool in the tins for 5 minutes, then turn out onto a wire rack to cool further.

Serve warm for breakfast.
