IPA (India Pale Ale) is a very hoppy style of beer, which gives extra depth of flavour to this fairly simplepickle for hop shoots. Use the IPA, vinegar and water at a ration of 1:1:0.5.

Ingredients:

500g fresh hop shoots, washed, drained and patted dry
500ml IPA (use a good very hop-forward style)
500ml white malt vinegar
250ml water
75g (1/2 cup sugar) [I prefer golden caster sugar, but white sugar will do]
1 tbsp salt
1 tsp coriander seeds
2 garlic cloves, scored
8 strips of pared lemon zest

Method:

Combine the beer, vinegar, water, sugar, salt, coriander seeds, garlic and lemon zest in a saucepan. Heat gently, stirring occasionally until the sugar and salt dissolve. Bring just to a boil, take off the heat and set aside to infuse.

Pack the hop shoots into two large pickling jars that have been sterilized and warmed in a cool oven. Pour over the infused pickling liquor, making sure there are no air bubbles, and that the hop shoots are covered. Be sure to leave a 2cm head space at the top.

Secure the lid, allow to cool then label and store in a cool, dark, place for 2 weeks to mature before opening and using. Store in the refrigerator once opened.
