This is a classic Italian summer salad. The ingredients can be variable, but this version is finished with mallow flowers and marsh samphire. In the original version the mallow flowers referred to the flowers of wild common mallow. But you could just as easily use the garden flowers of related hollyhock.
Ingredients:
200g iceberg lettuce
100g baby rocket leaves
50g Pitted green olives, sliced
10 Fresh common mallow or hollyhock flowers
6 marsh samphire branches, cut into 2cm lengths (either fresh or preserved in oil)
olive oil, to taste
sea salt, to taste
freshly-ground black pepper, to taste
lemon juice, to taste
Method:
Wash the flowers then gently pat dry.
Tear the iceberg lettuce into bite-sized pieces then mix with the rocket leaves and arrange in a bowl.
Top with the olives, flowers and samphire.
Whisk together 2 tbsp olive oil, 4 tbsp lemon juice, salt and black pepper in a small bowl. Drizzle over the salad and serve.
