Imbila (Sour Porridge)

Ingredients:

300g cornmeal (mealie meal)
200g sorghum
1l water

Method:

Soak the cornmeal and sorghum in water over night. Drain then cook as you would an porridge (ie add to boiling water until soft and thickened).

Allow to cool and rest for several hours (preferably over night) so that the mixture can begin fermenting. Add sugar to taste and drink.
