This hearty stew or chicken and vegetables in a coconut milk base is a staple in Marshallese households.
Ingredients:
1kg chicken (I use thigh meat, cut into bite-sized pieces)
250ml coconut milk
500ml water
1 onion, chopped
2 garlic cloves, minced
1 tbsp ginger, grated
2 carrots, sliced
2 potatoes, peeled and diced
oil for frying
Salt and freshly-ground black pepper to taste
Method:
Place a large pan over medium-high heat. Add a glug of oil and use to brown the chicken pieces until nicely coloured all over.
Add in the onion, garlic, and ginger, and fry for about 90 seconds, or until fragrant.
Pour in the coconut milk and water, then toss in the carrots and potatoes.
Bring the ingredients to a simmer, cover and cook for about 45 minutes, or until the chicken is tender and the vegetables are soft.
Season to taste with salt and black pepper, and serve hot.
