Iced Coconut Soup

Ingredients:

250ml chicken stock
420ml coconut milk (not sweetened [tinned is fine])
salt and black pepper, to taste
1 or 2 tbsp curry powder (or to taste)

Method:


Combine all the ingredients in a bowl and mix with a hand blender. Transfer to the refrigerator and chill until needed.

Serve as a starter, ladled into chilled soup bowl and accompany with a chilled slice of honeydew melon.
