Iced Cinnamon and Musk Rolls

The aroma of musk has long been used in perfumery and cooking. The Elizabethans and Stuarts considered it to be an aphrodisiac. Originally it can from animal glands, but a number of plants also have the musk aroma. This recipe uses musk mallow seeds to flavour a traditional breakfast roll, bringing back a long-lost spice sensation to the kitchen.
Ingredients:
280g plain flour
1 tsp salt
3 tsp baking powder
6 tbsp butter
160ml milk
2 tbsp butter, softened
2 tbsp ground
cinnamon
2 tsp ground
musk mallow seeds
50g granulated sugar
100g icing sugar
1 tbsp butter, melted and cooled
1/2 tbsp milk
1/2 tsp vanilla extract
Method:
Sift together the flour, salt and baking powder into a bowl. Cut in the 6 tbsp butter with pastry knives until completely incorporated then stir in the milk. Using your hands bring the mixture together as a dough. Turn onto a lightly-floured work surface then knead lightly before dusting the top and rolling out to about 6mm thick (you should have a rectangle about 18 x 40cm in size).
Spread the softened butter over the top of the dough then mix together the sugar, ground musk mallow seeds and ground cinnamon and scatter over the butter. Roll the dough up very tightly (Swiss-roll fashion) then using a very thin knife cut into 3cm thick pieces and place in the wells of a greased muffin tin.
Transfer to an oven pre-heated to 210°C and bake for about 15 minutes. In the meantime combine the final four ingredients and stir to form the icing (frosting). Remove the cinnamon rolls from the oven and allow to cool slightly before pouring the icing over the hot rolls. Allow to cool before removing from the muffin tins and serving.
