Also known as Ayib, this is an Ethiopian creamy dip/fresh cheese with herbs that's typically served as an accompaniment.

Ingredients:

450g curd cheese (cottage cheese or similar)
4 tbsp yoghurt
1 tbsp grated lemon zest
1 tbsp salad herbs (rocket, basil, lamb's lettuce, oregano etc)
2 tbsp chopped parsley
1 tsp salt
1/4 tsp black pepper

Method:

Iab itself is an Ethiopian curd cheese much like Greek Feta that contains a number of herbs. This recipe is an attempt at replicating (or at least simulating) Iab.

Add the cottage cheese to a bowl along with the salad herbs, chopped parsley, salt and black pepper. Drain-off any excess liquid. You are looking for a mixture that's soft enough to spoon but firm enough to remain firm when served.

To serve form quenelles and place two on a piece of Injeera bread that's placed in front of each guest.
