Huîtres à la laitue de mer (Oysters with Sea Lettuce) is a traditional French recipe for a classic starter of oysters baked on the half shell in a sausage meat and butter stuffing with breadcrumbs that's bound with eggs and flavoured with dried sea lettuce. Opened Oysters on the half shell, ready to be cooked in this French recipe of Huîtres à la laitue de mer (Oysters with Sea Lettuce).
Ingredients:
12 to 16
oysters (3 or 4 per person)
6 tbsp breadcrumbs
150g sausage meat
1 tbsp
Dijon mustard
salt and freshly-ground black pepper, to taste
2 garlic cloves, finely chopped
2 shallots, finely chopped
whites of 3 eggs
100g butter
1 tbsp (heaped)
dried sea lettuce
Method:
Remove the oysters from their shells then clean half the shells and set aside. In a bowl make a stuffing by combining the breadcrumbs, sausage meat, mustard, garlic, shallots, egg whites, butter and dried sea lettuce. Mix thoroughly then season with salt and black pepper.
Return the oysters to the shells and surround with the stuffing (divide evenly between the shells). Transfer to an oven pre-heated to 170°C and bake for 18 to 20 minutes. Serve immediately.
