Horseradish Sauce (also known as Creamed Horseradish) is a traditional British recipe for a classic accompaniment to beef of freshly-grated horseradish mixed with cream, sugar, mustard and white wine vinegar. This is the classic British accompaniment to roast beef and though you can easily buy it in the shops nothing really compares to home-made horseradish sauce.
Method:
Place the horseradish root in a bowl of water and allow to soak for 1 hour. At the end of this time wash thoroughly under plenty of cold water and scrape clean. Grate the horseradish (this will irritate your nose! but it's worth the pain). Whip the cream to soft peaks then fold-in the grated horseradish, sugar, mustard, salt, pepper and vinegar.
Chill in the fridge for at least 2 hours to let the flavours infuse then serve with beef.
