Honey and Spice Buns

This is a classic British bun version of a spiced tea bread. The blend of honey and spices makes these little buns very aromatic and they are wonderful served with mulled wine at Christmas, or with tea at any time of year.

Ingredients:

250g (2 cups) plain flour
1 tsp ground cinnamon
1/4 tsp freshly-grated nutmeg
1/4 tsp ground mace
1 tsp bicarbonate of soda
125g (1/2 cup) butter, softened
10 tbsp soft brown sugar
1 large egg, separated
125g (1/2 cup) clear honey
4 tbsp milk (about)
caster sugar, for sprinkling

Method:

Sift the flour into a large bowl along with the cinnamon, nutmeg, mace and bicarbonate of soda.

In a separate bowl, cream together the butter and sugar until light and fluffy. Beat in the egg yolks, then gradually add the honey.

With a large metal spoon, using a cutting action, fold the flour mixture into the honey mixture, adding just enough of the milk to give a soft dough that will just drop off the spoon.

In another bowl (which must be clean and dry), whip the egg whites until they form soft peaks. Now use a large metal spoon to fold the egg whites into the cake mixture.

Line the wells of a 12-hole bun tin with paper cases and divide the batter between these. Transfer to an oven pre-heated to 200°C (400°F, Gas Mark 6) and bake for about 18 minutes, or until nicely risen, golden brown on top and firm to the touch.

When cooked, dust the tops lightly with caster sugar then set aside to cool completely on a wire rack before serving.
