Honey Mushroom Stuffing

Honey Mushroom Stuffing is a modern American recipe for a classic vegetarian stuffing of honey mushrooms (honey fungus) and wild garlic mustard greens that are fried and combined with garlic, bread, flour, herbs, cheese and ketchup and which can be used to stuff a whole range of dishes. Ingredients:

60ml olive oil
1.5l honey mushroom caps, blanched in boiling water for 1 minute, drained and chopped
200g garlic mustard leaves (or mustard greens)
4 garlic cloves, crushed
120g fresh breadcrumbs
70g Mozzarella cheese, grated
2 tbsp fresh basil, finely chopped
70g barley flour
2 tsp dried oregano, crumbled
2 tsp dried marjoram, crumbled
2 tbsp soy sauce
1/2 tsp freshly-ground black pepper
250ml ketchup

Method:

Heat the olive oil in a pan, add the shiitake mushrooms and garlic mustard leaves and fry gently for about 15 minutes, or until the liquids are released and have all evaporated.

Turn the mixture into a bowl then combine with the garlic, breadcrumbs, cheese, basil, flour, oregano, marjoram, soy sauce, black pepper and ketchup.

This is a very flavoursome stuffing with a meaty texture that can be used for a whole range of vegetarian and meat-based dishes: stuffing meat, stuffing fish, stuffing baked potatoes and breads it can also be used for pies.
