Heat the olive oil in a pan, add the shiitake mushrooms and garlic mustard leaves and fry gently for about 15 minutes, or until the liquids are released and have all evaporated.
Turn the mixture into a bowl then combine with the garlic, breadcrumbs, cheese, basil, flour, oregano, marjoram, soy sauce, black pepper and ketchup.
