In essence, this is an Americanized version of bread and butter pudding that's been adapted to be cooked in a slow cooker (crockpot).
Ingredients:
2 eggs, lightly beaten
600ml milk
1 tsp vanilla extract
1/2 tsp ground cinnamon
1/4 tsp salt
250g bread, sliced into 3cm cubes
100g brown sugar
90g raisins or chopped dates
Method:
Combine the eggs, milk, vanilla extract, cinnamon, sugar and salt in a bowl. Whisk to combine then stir-in the bread and fruit. Pour the mixture into a 1.5l baking or soufflé dish. Place a trivet or a ring shaped from aluminium foil in the base of your crockpot and set the pudding basin on top.
Add 120ml hot water to the crockpot then cover and cook on high for about 2 hours. Serve the pudding either hot or cool with custard.
