Linguiça is a traditional Portuguese sausage that works well as a flavourful addition to beef-based stews as well as egg and fish dishes. It's also an excellent breakfast sausage in its own right.
Cut the pork meat into cubes then grind coarsely. Transfer to a bowl then combine with all the remaining ingredients. Mix thoroughly with your hands then cover and refrigerate for 48 hours. Use the mixture either to fill sausage casings, or use your hands to create loose patties. These are best smoked and then frozen. Of course, you do not have to smoke the sausage and you can freeze them directly.
The simplest dish you can make is a breakfast of linguica sausage sliced into 5cm lengths and fried which is served with scrambled eggs flavoured with a little paprika.
