Holiday Eggnog Cheesecake

Ingredients:

150g Graham cracker crumbs (or digestive biscuit crumbs)
1/4 tsp freshly-grated nutmeg
50g sugar
50g butter, melted and cooled
1 envelope unflavoured gelatine
240g cream cheese, softened (or you can use my home-made cream cheese recipe to prepare your own)
250ml Eggnog
60ml cold water
50g sugar
240ml whipping cream, whipped

Method:

In a bowl, combine the biscuit (cookie) crumbs, butter, sugar and nutmeg. Stir to mix well then press into the base of a 22cm diameter springform cake tin. Make certain you tamp the crust down well.

Meanwhile, soften the gelatine in the water the stir over low heat until completely dissolved. Meanwhile cream the cream cheese until soft. Gradually beat in the gelatine mix and the eggnog. Beat thoroughly to blend then place in the refrigerator and chill until slightly thickened. Remove from the refrigerator and fold in the whipped cream. Pour over the prepared crust then place in the cheesecake in the refrigerator and chill over night, or until set.
