Higos con Queso (Figs with Cheese) a Classic Ecuadorian recipe for a dessert of stewed figs served with honey sauce and finished with a finger of cheese.

Ingredients:

12 black figs
1.5l water
1 piece of canella
1 cinnamon stick
4 cloves
4 allspice berries
honey, to taste
6 fingers of cheese

Method:

Wash the figs thoroughly and cut a cross in their bases. Sit in a pot and carefully pour in the 1.5l water. Bring to a boil, cover and cook for 5 minutes.

Add the spices and continue cooking gently, covered, for about 3 hours, or until the liquid has reduced to a thick sauce. Remove the figs and arrange on a plate. Sweeten the sauce with honey.

Strain through a fine-meshed sieve, pour back into a pan, allow to warm through and pour over the figs. Allow the figs to cool and serve accompanied by fingers of cheese.
