Ingredients:

450g plain flour
1/2 tsp salt
1/2 tsp active, dried, yeast
360ml buttermilk or liquid crème fraîche
3 tbsp mixed fresh herbs, finely chopped (any combination of sage, thyme, rosemary, chives, parsley, etc)
200g grated Cheddar cheese
1 egg yolk

Method:

In a bowl, mix together the flour, salt, yeast and herbs. Form a well in the centre and pour in the buttermilk or crème fraîche. Gradually mix the liquid into the solids using a circular motion. Add a little milk, if necessary, as the dough should be a little loose.

When the dough is completely smooth, wet your hands and knead the dough lightly. Wet your hands again and divide the dough into small pieces. Shape these into buns and sit on a lightly-greased baking tray.

Cover loosely and set aside in a warm place to rise for 30 minutes. After this time, cut the top off each bun. Brush the tops with beaten egg yolk then sit some grated Cheddar cheese on top.

Transfer to an oven pre-heated to 230°C and bake for 20 minutes. Remove the buns from the oven and allow to cool on the baking tray. Serve warm.
