This is a version of traditional Scottish Tablet that includes dried wood avens (herb bennet) root that yields an interesting clove/spice background to the confection. The recipe came from a Scottish friend an an avid forager, so I'm counting this as an authentic Scottish recipe!

Ingredients:

900g (4 1/2 cups) granulated white sugar
1 tbsp wood avens root spice
250ml (1 cup) full-fat (whole) milk
397g tin of sweetened condensed milk
85g (6 tbsp) butter

Method:

Combine the sugar, milk, butter and wood avens root spice in a saucepan. Place on the stove over medium heat and stir until the sugar has melted and everything has combined.

Bring to a brisk simmer and cook, stirring constantly to prevent burning, for 20 minutes until the mixture darkens to a mid caramel colour. Take off the heat then beat with a balloon whisk before pouring into a buttered Swiss (jelly) roll tin.

Set aside over night to cool and solidify then turn out onto a lightly-greased work surface. Cut into squares, then transfer to an air-tight tin and store. Serve individual squares as a treat.
