Ingredients:

450g carrots, peeled and finely grated
220g sugar
2 tbsp sugar
500ml low-fat milk
1/4 tsp ground cardamom
2 tsp freshly-grated lemon zest
2 tbsp butter
2 tbsp flour

Pine nuts, pistachios, almonds and/or raisins to garnish

Method:

Combine the carrots, sugar, milk, cardamom and lemon zest in a pan. Simmer gently for 15 minutes, or until the carrots are tender. Pour into a sieve, pressing gently to extract as much liquid as possible from the carrots (reserve the liquid).

Melt the butter in a pan then scatter over the flour and stir to form a roux. Add the carrots, stirring to coat with the flour mixture then toss for 3 minutes. Pour the original cooking liquid over the carrots, mix thoroughly, bring to a simmer and cook for 5 minutes, stirring occasionally.

Divide the mixture between individual serving dishes and garnish with a mix of nuts and raisins.
