This is a modern Irish recipe that uses a combination of heather flowers and lavender flowers as flavouring.
Ingredients:
225g Unsalted Butter
2 heather honey
caster sugar, for dusting
300g plain (all-purpose) flour, plus extra for dusting
1/2 tsp dried heather flowers
1/2 tsp dried lavender flowers
pinch of salt
Method:
Pre-heat your oven to 190°C. Line a baking tray with parchment paper.
Cream together the butter and honey until pale and fluffy. Sift over the flour and stir to combine.
Finely chop the dried flours and scatter over the dough with the salt. Stir to incorporate.
Turn the dough out onto a lightly-floured work surface and roll out to about 2cm thick. Cut into 30 rectangular fingers.
Prick the top of each with the tines of a fork, transfer to your baking tray then place in your refrigerator and chill for 20 minutes.
Transfer to the centre of your pre-heated oven and bake for 20 minutes, until pale golden brown in colour.
Remove from the oven and cool on the baking tray for 5 minutes. Transfer each finger to a wire rack and cool completely before serving or storing. If desired, you can dust with a little caster sugar.
