Hawthorn Jelly

Hawthorns berries, 'haws' look like bright red mini apples. The flavour and size can be highly variable depending on the tree, but the best have a light apply-flavour that intensifies with cooking. They also make a great neutral background for other fruit. Even better, they have a very high pectin content and are excellent used instead of crab apples for setting other fruit. They even make a half-way decent jelly on their own, as this recipe demonstrates.

Ingredients:

1kg ripe hawthorn berries
400g (2 cups) white sugar
juice of 1 lemon

Method:

Remove any stems from the haws and discard any leaves that might have been picked by accident. Wash the berries, drain in a colander then pour into a large saucepan with 1l )4 cups) water. Bring to a simmer over medium heat and cook for 40 minutes. During this time use a potato masher to break up the fruit.

At the end of this time, strain through a jelly bag, allowing the liquid to drip naturally over night (do not be tempted to squeeze the bag, or your jelly will come out cloudy). You should end up with about 500ml (2 cups) of juice.

Pour this juice into a clean saucepan and combine with the sugar and lemon juice. Bring to a boil, stirring constantly, and cook for 10 minutes, until the jelly sets.

Test for setting by placing a plate in the fridge. Spoon a little of the jam onto the plate, allow to cook then move it with your fingernail. If a crinkly skin forms then the jam is ready. If not continue boiling for 5 minutes more and test again.

Pour the resultant jelly into clean, hot jars, seal the lids, and let cool to room temperature before labelling and storing. They will keep in a cool, dry, cupboard for several months. Once opened store in the refrigerator.
