Havuçlu Toplar (Turkish Carrot Balls) is a traditional Turkish recipe for a classic dessert of carrot puree, petits beurres biscuits, walnuts and sugar formed into a mass that's shaped into balls, coated in more biscuits and chilled until set. Ingredients:
200g carrot purée (peel and cook baby carrots in lightly-salted water with 1 tbsp sugar, drain and mash)
140g petits beurres biscuits finely ground
120g ground walnuts (or a mix of walnuts and hazelnuts)
pinch of ground cinnamon
100g sugar (or to taste)
ground biscuits or flaked coconut
Method:
Combine all the ingredients in a bowl and mix thoroughly. If the mass is hard to handle stir in about 2 tbsp melted butter.
Form the resultant dough into walnut-sized balls and coat in ground biscuits or flaked coconut. Place on a baking tray and chill for 30 minutes before serving.
