Hasselback Potatoes is a traditional British recipe for a classic accompaniment of potatoes that are sliced across the top, coated in butter, dusted with breadcrumbs and Parmesan cheese and oven roasted. Wash and peel the potatoes. Now cut a slice off the base of each potato so that you can sit them flat. Place each potato (cut side down) on a cutting board then use a sharp knife to make evenly-sliced cut s all along the top of the potato (crosswise) and cutting about 2/3 of the way through the potato itself.
Arrange the potatoes in the base of a greased baking tray then brush them with the melted butter before sprinkling over a mix of the breadcrumbs and Parmesan cheese.
Transfer to an oven pre-heated to 180°C and roast for about 50 minutes, or until golden brown and cooked through. Serve hot.
