Ingredients:
50g butter
1 large onion, chopped
1 small red bell pepper, chopped
1 tbsp garlic, finely chopped
2 tbsp plain flour
120ml chicken stock
120ml double or whipping cream
90g Feta cheese
60ml plain yoghurt
300g spinach leaves, stemmed and shredded
a few generous slugs of Tabasco sauce
salt and black pepper, to taste
Method:
Melt the butter in a large pan and use to fry the onions, red bell pepper and garlic for about 6 minutes, or until just softened. Sprinkle the flour over the top and stir in. Continue cooking for 1 minute then add the chicken stock, stirring all the while. Bring to a simmer, then stirring with a whisk, add the cream. Continue cooking, stirring all the while, for about 3 minutes until the mixture has thickened (do not allow the mixture to boil).
Now stir-in the cheese, yoghurt, spinach and Tabasco and continue cooking until the spinach wilts and all the ingredients have heated through. Take off the heat, adjust the seasoning to taste then ladle into a bowl and serve with crackers, bread slices or tortilla chips.
