Habas con Refrito (Beans with Refried Beans) a Classic Ecuadorian recipe for a dish of prawn and potato patties that are fried to cook and served with a cheese, onion, vanilla wafer, green chilli, garlic and peanut sauce.
Ingredients:
500g fresh soya beans or broad (fava) beans
250g refried beans
120ml cream cheese (or you can use my home-made cream cheese recipe to prepare your own)
salt and freshly-ground black pepper, to taste
Method:
Bring a pan of salted water to a boil, add the beans and boil for about 25 minutes, or until tender.
Cook the refried beans in a pan until heated through. Stir in the cream cheese and continue cooking over medium heat until warmed through. Adjust the seasoning.
Drain the boiled beans and arrange in a serving dish. Spoon the refried beans in the centre and serve.
