Güschgle-Knöpfle (Güshgle-style Button Noodles) is a traditional Liechtensteiner (from Liechtenstein) recipe for a classic dish of semolina flour button noodles that's layered with potatoes and cheese and served as an accompaniment. This dish comes from the Güshgle region of the Liechtenstein alps. Easy to make, but delicious.
Ingredients:
440g semolina flour
4 eggs
salt and freshly-grated nutmeg, to taste
2 tbsp oil
200ml milk
2l water
4 medium potatoes, peeled and diced
160g cheese, grated (Jähringer is traditional, but you can use Gruyère, Emmental or Sbrinz)
crisp-fried onions, to serve
Method:
Combine the semolina, egg, salt and nutmeg in a bowl with the oil. Stir in the milk and water until you have a batter the consistency of thick oil.
Bring a pan of lightly-salted water to a boil, add the potatoes and cook for about 15 minutes, or until tender. Drain and set aside to keep warm.
Bring another large pan of salted water to a boil then force the batter into this through a Knöpfel sieve or a colander. Cook until the knöpfle rise to the surface then remove from the pan with a slotted spoon.
Take a serving dish and arrange the potatoes and knöpfle in this, separated by layers of the grated cheese. Garnish with the crisp-fried onions and serve.
