This is a variant of the classic caramel sauce used for desserts that uses Guinness as a base.
Ingredients:
100ml cream
100g butter
100g soft dark brown sugar
2 tbsp Guinness (or similar stout)
1 tsp Crème de Cassis (or similar blackcurrant liqueur)
Method:
Combine the cream, butter, sugar and Guinness in a pan over medium heat and bring the mixture to a boil. Add the blackcurrant liqueur and mix thoroughly. Reduce to a simmer and cook until slightly thickened.
Take off the heat and allow to cool slightly before serving spooned over your favourite dessert.
