Guam Red Rice

Red rice is the most iconic dish of the Mariana Islands. Rice made bright with achote is served alongside everything from BBQ to Thanksgiving turkey. Make any meal a fiesta by doctoring up your rice with this easy recipe.

Ingredients:

1kg white short-grain rice
1.375l water, and more as needed
60ml vegetable oil
1 tbsp bacon drippings
40g yellow onion, chopped
1 ½ tsp garlic powder
¾ tsp sea salt
½ tsp ground black pepper
5 tsp seasoning salt
150g achiote (annatto) seeds

Method:

Wash the rice thoroughly then transfer to a medium-sized saucepan and pour over the water. Add the oil, bacon drippin and onion. Season to taste with seasoning salt, ground black pepper, garlic powder, and salt so that it is quite flavourful. Place the pan over medium-high heat.

Place a strainer on top of the pot so that it is submerged about 5cm into the liquid. Pour the achiote seeds into the strainer. As the liquid heats up the colour and flavour of the achiote will be released into the rice.

Stir the seeds within the strainer constantly as the liquid heats up and comes to a boil. Boil the rice for 10 minutes, long enough to get a dark orange, almost red colour. Stir the pot of rice occasionally to prevent the bottom from sticking and burning.

As soon as the colouring is completed, remove the strainer with the seeds. At this time, if it looks like too much of the water has been absorbed, add a further 60ml of water.

Stir rice. Cover the pot and allow to steam for 10 minutes.

Check rice. If grains are cooking and the rice looks to have enough water, turn the rice over with a slotted spoon and steam for a further 15 minutes. However, if the grains are still quite opaque and the rice looks dry, add 125ml more water. Do not stir the cooked rice as stirring makes cooked rice mushy.

Check the rice and repeat the above process until the rice is fully cooked. Serve hot as an accompaniment.
