Ground Elder Quiche

Ground elder is a very common woodland plant, but not one that many people think is edible. In fact the young, bright green, shoots of ground elder make a very tasty vegetable.

Ingredients:

Shortcrust pastry (125g flour, 60g butter, a pinch of salt and enough water to form a dough)
1 bunch (about 12 to 15 young stems) of Ground elder
2 eggs
300ml milk
salt and black pepper, to taste
a grating of nutmeg
100g of grated Cheddar cheese
20g freshly-grated Parmesan cheese

Method:

Begin with the pastry: sift the flour and rub-in the butter until you get a crumbly mixture then add just enough water to form a dough. Tip the dough onto a floured surface and roll out to the size of your flan or quiche dish. Grease the dish and use the pastry to line it.

Remove the leaves from the ground elder stems and coarsely shred them. Beat the eggs with the milk and season with salt, black pepper and nutmeg. Add the cheddar cheese and leaves and mix-in. Pour the filling into the quiche then sprinkle the parmesan over the top. Finish with a few twists of black pepper.

Place in an oven pre-heated to 180°C (350°F/Gas Mark 4) and bake for about 40 minutes, or until the pastry is golden and the filling has set. This quiche can be served either hot or cold.
