Grissniuys (Beestings Pudding)

This is a set colostrum (primary milk) pudding that's the Manx equivalent of Welsh Pwdin Llaeth Brith.

Ingredients:

1l Fresh Milk (second or third milking after calving)
3 tbsp Sugar (or to taste)
pinch of Salt.
freshly-grated nutmeg

Method:

Take the second or third milking of the cow after calving. Strain the milk into a pudding dish, add a pinch of salt and sugar to taste.

Transfer to an oven pre-heated to 150C and bake for about 50 minutes, or until set.

Remove from the oven, dust with freshly-grated nutmeg and serve.
