Grilled Potato Slices: An Irish recipe for an accompaniment of potato slices brushed with garlic and thyme oil that are dotted with butter and cooked under a grill (broiler).
Ingredients:
4 large potatoes, scrubbed clean but not peeled
2 garlic cloves, finely chopped
2 sprigs of fresh thyme
4 tbsp olive oil
60g butter, diced
salt and freshly-ground black pepper, to taste
Method:
Boil the potatoes in a pan of lightly-salted water for about 30 minutes, or until tender.
Drain the potatoes and set aside to cool until they can be handled. Pell the potatoes then slice thickly into a bowl. Add the garlic, thyme, oil and seasonings then gently toss the ingredients together to mix (be gentle to avoid breaking the potato slices).
Lay the slices in an even layer on a baking tray and place a small piece of the diced butter on each. Place the potatoes under a hot grill (broiler) and cook until browned on top. Turn the potatoes over and cook for 5 minutes more, or until crisp.
Sprinkle with salt and serve immediately.
