Green Velvet Cupcakes: An American recipe for a St Patrick's day-themed buttermilk and oil batter cupcake coloured green with food colouring.
Ingredients:
375ml oil
2 eggs
1/2 tsp green food colouring
1 tbsp vinegar
250ml buttermilk
300g sugar
1 tsp vanilla extract
300g plain flour
1 tsp baking soda
1/4 tsp salt
Method:
Whisk together the eggs, sugar, oil and vinegar in a bowl.
Sift together the flour, salt and baking soda into a separate bowl.
Add the egg mixture alternately with the buttermilk to the flour, mixing well to combine.
Blend in the vanilla extract and food colouring, then divide the batter between 12 muffin wells lined with paper cases.
Transfer to an oven pre-heated to 160°C and bake for about 16 minutes, or until well risen and a skewer inserted into the centre of the cupcakes emerges cleanly.
Allow to cool in the tins for 5 minutes, then turn out onto a wire rack to cool completely.
Decorate by piping vanilla buttercream over the top. Garnish with candy shamrocks if desired.
