Today we have an American recipe that is a crossover for Shrove Tuesday and for St Patrick's day. These oaten pancakes are delicious and can easily be coloured green for St Patrick's day.

Ingredients:

1l buttermilk (alternatively mix 4 tbsp vinegar with 1l whole milk and set aside for 5 minutes)
300g traditional oats
240g plain flour
240g wholegrain flour
2 tsp baking soda
2 tsp salt
1 tsp ground cinnamon
1 tsp wheatgerm
165g brown sugar
4 eggs
120ml applesauce
10 drops green food colouring

Method:

Combine the oats and buttermilk in a bowl. Set aside for between 3 and 5 minutes (if you like oat texture, soak for 2-3 minutes, if you want smoother pancakes soak for 5 minutes).

In a bowl, combine the flours, baking soda, salt, cinnamon, wheatgerm and brown sugar. In another bowl, beat together the egg, applesauce and the buttermilk and oat mixture. Add just enough green food colouring to yield a green tint (omit for Shrove Tuesday).

Stir the wet ingredients into the dry ingredients until just moistened.

Pre-heat a heavy-based frying pan or griddle over high heat. When hot, add a ladleful of the batter. Cook until bubbles appear on the surface then flip over and cook until the other side is golden brown.

Transfer the cooked pancakes to a baking tray and keep warm in the oven as you cook the remaining batter.

Serve hot with syrup, chocolate sauce, fresh fruit and jam.
