Ingredients:

200g sugar
250ml water
1l pink champagne
pinch of salt
200g fresh cherries

Method:

Combine the water and sugar in a small pan. Bring the mixture to a boil, stirring constantly, and cook until the sugar has dissolved.

Take off the heat and allow the sugar syrup to cool to room temperature before adding the champagne and salt. Mix thoroughly to dissolve then pour the mixture into a flat freezer-proof dish. Place in your freezer for 20 minutes then take out and stir vigorously with a fork, breaking up any ice crystals.

Repeat the freezing and beating every 30 minutes until the granita is firm. Freeze until needed.

To serve, remove the granita from the freezer and leave at room temperature for about 10 minutes to soften slightly. Scrape the granita mixture from the dish with an ice cream scoop. Serve in chilled red wine glasses and top with the cherries.
