Gooseberry and Almond Tart: A British recipe for a tart of a pastry cased filled with an almond, egg and butter mix that's topped with gooseberries before being oven baked and served with creme fraiche.
Ingredients:
375g
sweet shortcrust pastry
50g butter
110g caster sugar
100g ground almonds
1 whole egg
1 egg yolk
1 tbsp brandy
250g gooseberries
crème fraîche, to serve
Method:
Turn the pastry onto a lightly-floured work surface and roll out until large enough to line the base and sides of a 23cm diameter fluted loose-based flan tin (ensure that there is at least 3mm of pastry above the flan rim after trimming to allow for shrinkage).
Place the pastry case in the refrigerator to chill for at least 30 minutes.
Melt the butter in a large bowl, either in the microwave or over a pan of barely-simmering water. Mix in all but 1 tbsp of the sugar and beat well until dissolved. No stir in the ground almonds, egg and egg yolk along with the brandy. Beat until combined then spoon this mixture into the flan case.
Arrange the gooseberries on top and sprinkle with the remaining sugar. Transfer to an oven pre-heated to 200°C and bake in the bottom half of the oven for about 30 minutes, or until firm to the touch and golden brown.
This dessert can be served warm or at room temperature, accompanied by crème fraîche.
