Gomen (Ethiopian Collard Greens)

Ingredients:

1 bunch collard greens, washed
1 onion, chopped
1 tbsp niter kebbeh
salt and freshly-ground black pepper, to taste

Method:

Cut off the hard stem ends from the greens then chop the leaves coarsely. Add the niter kebbeh to a pot and when hot add the onion and fry for about 5 minutes then add the collard green leaves and season well. Continue cooking for about 15 minutes, adding water as needed, until the greens are well wilted.

Serve hot as an accompaniment.
