Golden Syrup Pumpkin Pudding: A British recipe for a steamed pudding made with a flour and pumpkin batter that's served with custard and which makes and excellent dessert for Halloween.
Ingredients:
250g self-raising flour
1/2 tsp mixed spice (pumpkin pie spice)
125g butter
100g soft brown sugar
60ml golden syrup (corn syrup)
2 egg, lightly beaten
60ml milk
100g cooked, mashed, pumpkin, cooled
350ml pouring-consistency custard, to accompany
Method:
Sift together the flour and mixed spice into a large bowl. In the meantime, combine the butter, sugar and syrup in a small pan. Stir over low heat until the butter has melted then take off the heat.
Add this butter mixture, eggs and milk to the dry ingredients. Using a wooden spoon, stir until the mixture is well combined. Now stir with a wooden spoon until everything is well combined. Finally stir in the cooked pumpkin, but do not over-beat.
Spoon the resultant mixture into a greased 1.5l pudding basin, the base of which has been lined with greaseproof (waxed) paper. Cover with a greased sheet of kitchen foil and add a lid (if you have one). Cove with a double layer of kitchen foil and tie in place.
Either place in a steamer basket or sit on a trivet in a large pan. Pour boiling water into the pan and either boil or steam the pudding for 100 minutes, or until cooked through. During this time do not allow the pan to boil dry.
Unwrap the pudding then turn out onto a serving plate. Serve immediately, sliced into wedges and accompanied by hot custard.
