This makes an excellent dessert for Valentine's day.

Ingredients:

7 Golden Delicious apples, cored and sliced into thin wedges
50g brown sugar
2 tbsp plain flour
1/2 tsp ground cinnamon
1/8 tsp freshly-grated nutmeg
1/2 tsp salt
Enough sweet short-crust pastry for a 22cm pie (about 250g)
35g choped nuts
2 tbsp rum
2 tbsp butter

Method:

Combine the apples with the brown sugar, flour, cinnamon, nutmeg and salt.

Take 2/3 of the pastry and use to line a 22cm diameter pie plate. Flute the edges of the crust then arrange the apples inside in a decorative patter. Sprinkle the apples with the nuts and rum then dot with butter.

Roll out the remainder of the pastry then cut into 2cm wide strips. Twist these then arrange in a lattice pattern on top of the pie. Crimp the edges securely then transfer to an oven pre-heated to 200°C and bake for about 55 minutes, or until the apples are tender when pierced with a fork. About half-way through cooking cover the top of the pie with foil to prevent over-browning of the crust.

Serve hot, cut into wedges and accompanied by rum sauce.
