Goda Masala Chicken Curry

This is a classic special Maharashtra flavourred with the sweet and aromatic spice blend, Goda Masala.
Ingredients:
300g Chicken portions on the bone
2 Onions, medium chopped
1 Tomato medium chopped
2 Red chillies
1 tbsp
ginger-garlic paste
6 Curry leaves
1/4 tsp Turmeric powder
3 tbsp
Maharashtrian Goda Masala
Salt, to taste
4 tbsp Oil
Curry leaves and Coriander leaves to garnish
Method:
Heat the oil in a wok or deep pan. Add the chicken and fry until browned all over. Remove with tongs or a slotted spoon and set aside. Add the onion to the oil remaining in the pan and fry for about 4 minutes. Add the ginger-garlic paste and fry until aromatic.
Now add the curry leaves, turmeric and goda masala and fry until the curry leaves blacken and turn aromatic. Now add in the red chilli, tomatoes and 250ml water. Bring to a simmer then return the chicken to the pan. Cover and cook over medium-low heat for 20 minutes, or until the chicken is tender and cooked through.
Remove the lid, season to taste with salt and continue cooking until the gravy has thickened to your liking.
If using curry leaves to garnish, halve them and blacken by frying in oil.
Serve hot garnished with coriander and curry leaves and accompanied by steamed rice.
