This is the Lagos street food version of suya. Bite-sized pieces of goat meat marinated in yaji (suya spice) threaded onto a thin skewer and barbecued on a brasier. This is counted amongst the ‘small chops’ but is often made more substantial by serving with a generous hunk of white bread. Great accompanied with a bottle of Guinness.
Ingredients:
500g (1 lb) mutton or goat meat. As an alternative, (you can also use 500g [1 lb] sirlion steak for this recipe; though it won’t be so authentic).
4 tbsp home-made
suya spice
2 tbsp oil of choice (I used a blend of vegetable oil and red palm oil)
1 large onion cut into thick slices
1 maggi cube, to season (you can substitute sea salt for this)
Method:
Soak bamboo skewers in a large bowl of water for at least 20 minutes before preparation. Wash the meat then slice into very thin and flat slices.
Place meat in a bowl, add the suya spice and season to taste with salt. (Note that you may or may not need to add salt depending on how salty your suya spice is so be sure to taste the spice first.) At this stage, Maggi cubes can be used if you want to kick-up the flavour. Though this is traditional, some crumbly stock can be overpowering and may not let you properly taste the suya mix. I typically leave it out… but try it out and select your personal preference.
Mix thoroughly to ensure that the spices properly coat all sides of the meat. In a concertina fashion, thread 3-5 slices of meat on each bamboo skewer. Brush the skewered meat generously with oil then place on a pre-heated barbecue grill and cook for 10 minutes per side. You can also cook on a grill (broiler); again for about 10 minutes per side.
If using an oven, line a baking tray with aluminium foil, set the skewered meat on top and generously grease with oil. Transfer to an oven pre-heated to 200°C (400°F) and cook for 20 minutes total time. After 10 minutes, turn the skewers over and continue cooking for 10 minutes more.
