Gnamkouji avec Jus Citron (Ginger and Lemon Drink): An Ivorian recipe for a drink of a ginger infusion flavoured with lemon juice and vanilla sugar that's sweetened with sugar and chilled before serving.

Ingredients:

1kg fresh ginger
1l water
1kg sugar
2 sachets (20g) vanilla sugar
juice of 3 lemons

Method:

Peel the ginger and chop coarsely. Place in a food processor and pulse to chop.

Pour the water into a large bowl, add the ginger paste, stir to combine and set aside to infuse for 30 minutes.

After this time, strain the juice then stir in the vanilla sugar, lemon juice and sugar. Beat until the sugar has dissolved then pour the mixture into bottles. Seal securely then set in the refrigerator to chill.

Shake the bottle before serving (the ginger settles to the bottom).
