This is a very simple blend that is completely gluten free and can be substituted for ordinary plain (all-purpose) flour in any cake, biscuit (cookie) or pastry recipe.

Ingredients:

300g brown rice flour
300g white rice flour
225g sweet rice flour
265g tapioca starch (or flour)
135g cornflour (cornstarch)
100g rice bran
2 tsp xanthan gum

Method:

Simply sift the ingredients together through a fine-meshed sieve 3 or 4 times then transfer to an air-tight canister.

To use simply replace the wheat flour in a recipe with an equivalent weight of the gluten-free dry flour mix.
