Glazed Parsnips

Glazed Parsnips is a traditional British recipe for a classic dish of parsnips that are boiled until tender before being glazed with butter and sugar before serving. Ingredients:

900g fresh parsnips, peeled, quartered lengthwise and cut at a 40° angle to yield 2cm lengths
25g butter
1 tablespoon brown sugar (or 1 tablespoon honey)

Method:

Place the parsnips in the pan, and add sufficient water to just cover them. Bring the water to the boil then turn down the heat and simmer for 5 minutes.

Drain the water then add the butter and sugar (or honey). Increase the heat slightly and continue to cook until the liquid becomes a syrupy glaze (should take about 5 minutes). At this point the carrots are ready to serve.
