Glacé Icing

Also known as water icing, glacé icing (literally glaze icing) is probably one of the simplest icings to make; just a stiff blend of icing sugar and water. Though you can use fruit or citrus juice instead of the water.

Ingredients:

100g icing sugar
1 tbsp water

Method:

Sieve the icing sugar into a bowl add the water and beat until smooth. The icing needs to be sufficiently thick to coat the back of the mixing spoon. If it's too thin then add a little more sieved icing sugar. If it's too thick then add a few more drops of water.

This is a very basic icing. If desired you can add a few drops of flavouring and colourings. Vanilla extract is good.

If you want to make a lemon, orange or lime glaze simply replace the mixing water with the appropriate citrus juice.

For chocolate icing simply add 2 tsp of cocoa powder into the icing sugar before adding the water or fruit juice.

For a coffee icing simply replace the mixing water with strong black coffee.

For almond icing, make Almond milk and use this instead of the water when mixing.

Basically the options are only limited by your imagination. If you're using the icing to decorate a Christmas or birthday cake then vary the flavours to suit the colours of the icing sugar you'll be using (lime for green, strawberry for red, lemon for yellow etc).
