Ginjabeer

Ginjabeer is a traditional Equatorial Guinean recipe for a classic ginger beer made from ginger juice blended with lemon juice and pineapple juice, sweetened with sugar and chilled before serving. Though Spanish, Portuguese and French are the official languages of Equatorial Guinea, Pidgin English is also spoken and recognized. The name of this dish is, of course, a Pidgin corruption of 'ginger beer'.

Ingredients:

2kg fresh ginger
60ml lemon juice
1l pineapple juice
500g sugar
a few cloves

Method:

Peel and crush the ginger, add to a pan with 500ml water. Bring to a boil, reduce to a simmer and cook, covered, for 20 minutes. Take off the heat and set aside to cool.

Strain the juice from the ginger and pour into a pan with the lemon juice, pineapple juice, sugar and cloves. Heat, stirring, until the sugar dissolves then take off the heat and set aside to cool.

Strain into bottles, stopper securely and store in the refrigerator to chill before serving.
