Ginger, Pork and Mushroom Soup

Method:

Add the dried wood-ear mushrooms into a bowl, cover with boiling water and leave to soak for 25 minutes. Meanwhile cut the pork into thin strips some 4cm long and julienne the ginger (cut into thin matchsticks) and slice the spring onions very thinly.

Once the mushrooms have soaked drain them and rip into bite-sized pieces (do not pat dry). Place a wok on high heat, add oil and when smoking add the ginger and stir-fry for a few seconds before adding the pork and stir-frying for 30 seconds. Add the mushrooms and fry for a further 30 seconds.

Add all the remaining ingredients (apart from the spring onions), bring to the boil then reduce to a simmer. Remove any scum from the surface then simmer very gently for a quarter of an hour before adding the spring onions and serving immediately.
