This is a traditional Lithuanian method to prepare coffee from acorns.

Ingredients:

1l (4 cups) acorns
1l (4 cups) milk

Method:

Pick ripe acorns on a dry autumn day. Take them home, brush free of any dirt and debris then arrange in a single layer on newspaper. Allow to dry at room temperature for 2-3 days.

After this time, shell the acorns, transfer to a large saucepan and pour over the milk. Bring to a simmer and cook for 45–60 minutes, until the acorns are soft.

Blot the acorns dry then place in a dry frying pan and toast until golden brown. Turn out onto a plate and allow to cool before grinding in a coffee grinder and storing in an air-tight jar.

To make coffee, bring 500ml water per mug to a boil. Add in 4 tsp acorn coffee per mug and boil for 2–3 minutes. Pour into mugs, whiten with milk or cream and sweeten with sugar to taste.
