Georgian Potato Soup is a traditional Georgian recipe for a classic soup of potatoes and onions cooked in chicken stock with cottage cheese that's flavoured with apples and a zingy spice blend. Combine 240ml of the cream, the cottage cheese and the flour in a mixing bowl and beat until smooth before blending in all the remaining cream. Cover the bowl and set aside in the refrigerator until needed.
Combine all the spices and mix thoroughly then divide into two equal portions. Take a large heavy-bottomed pan and place on high heat for 3 minutes then add all the vegetables (but reserve 350g of the potatoes) and one of the spice portions. Stir and cook over high heat for 5 minutes then add the apple juice and the apple sauce. Cook for a further 3 minutes before adding the stock and the remaining spice blend. Continue cooking, stirring frequently, for 12 minutes.
Take off the heat at this point then allow to cool slightly. Purée the mixture in a blender until smooth then return to the pan, add the reserved potatoes and bring the mixture to a boil. Reduce the heat to a low simmer, cover and cook gently for 15 minutes (top-up the liquid as needed). Blend in the cream mix at this point and continue cooking, stirring frequently, for a further 4 minutes
Ladle into soup bowls and serve hot, garnished with chopped dill.
