Georgian Fruit Buns

Ingredients:

6 tbsp baking powder
2 tsp ground cinnamon
900g pain flour
1 tsp salt
1/2 tsp allspice
1 tbsp brown sugar
120ml runny honey
280g raisins
500ml cream
120ml cream cheese
750g apples, peeled, cored and diced
50g prunes pureed
80ml apple sauce
60g peaches, puréed
80ml water

Method:

Mix the dry ingredients together in a large bowl. Add the honey, fruit purées, spices and the water and stir to combine. Add the cream cheese by the tablespoon and, using your hands, fold the cream cheese into the flour until thoroughly combined.

Use a folding motion with your hands and mix until all the ingredients are throughly blended together. Add the diced apples and the raisins and mix into the dough using the same folding method. Add the cream and fold until completely blended. Bring the dough together then divide into 24 equal pieces and form into round balls. Transfer these onto a well-greased baking tray and slightly squash the top of each to flatten. Transfer to an oven pre-heated to 150°C and bake for about 50 minutes, or until lightly golden.

Transfer to a wire rack to cool and serve warm.
