The recipe for Gentleman's Relish has remained a secret since it was first invented by John Osborn in 1828 and is only licensed to be made by Elsenham Quality Foods. The actual recipe itself remains a secret and that secret lies in the precise mix of herbs and spices used. This recipe comes quite close and makes and excellent substitution in
Scotch Woodcock.
Ingredients:
200g
anchovy fillets (1 tin), drained and coarsely chopped
2 tbsp fresh white breadcrumbs
150g butter
1/4 tsp
cayenne pepper
1 pinch ground
cinnamon
1 pinch freshly-ground
nutmeg
1 pinch ground
mace
1 pinch ground
ginger
1/4 tsp crumbled dried
oregano
a few generous twists of freshly-milled black pepper
Method:
Add the anchovies and butter to a pestle and mortar and pound to a paste. Stir-in the breadcrumbs, spices and pepper then spoon the resultant paste into a large ramekin. Cover and chill then serve.
This makes an excellent accompaniment to scrambled eggs, toast or as an addition to savoury sauces. It's a crucial ingredient in 'proper' Scotch Woodcock.
